The Fern Hotels & Resorts Launches Silk Route-Inspired Restaurant ‘Kanyshka’

The Fern Hotels & Resorts, India’s leading environmentally sensitive hotel chain, has launched Kanyshka, a fine-dining restaurant inspired by the historic Silk Route. Located at The Fern Residency in Bhiwandi-Pimplas, Maharashtra, the restaurant showcases a fusion of Indian, Mediterranean, and Middle Eastern cuisines, reflecting the rich cultural and culinary exchange of the ancient trade routes. Following its debut, the flagship restaurant will expand to other locations, including Kolhapur and Goa.

Suhail Kannampilly, Managing Director of The Fern Hotels & Resorts, describes Kanyshka as a celebration of the Silk Route’s legacy through food, blending history with innovation to create a distinctive culinary experience. The menu features innovative dishes like Edamame Hummus with Ragi Chips, Butter Chicken and Feta Sambousek, and Mediterranean flatbreads like Pide and Manakish. Signature dishes, including Shish Tawook, Seekh Kebab, Mandi Rice, and Biryani, emphasize bold flavors and premium ingredients.

The restaurant’s Mediterranean-inspired interiors feature natural wood, terracotta accents, and vibrant tiles, creating a welcoming yet sophisticated ambiance. Enhanced by instrumental Arabic music, the setting is ideal for intimate dinners, social gatherings, and business meetings.
