Peridot Set to Redefine Hong Kong’s Bar Scene with Terroir Cocktails and Plant-based Haute Cuisine

Perched high on the 38th floor of The Henderson, the soon-to-open Peridot at Summit 38 promises to be Hong Kong’s next big name in hospitality — blending cutting-edge design, terroir-inspired mixology, and plant-based fine dining.

Designed by Studio Paolo Ferrari, Peridot’s surreal lime-green interiors reflect its bold spirit — a place where futuristic aesthetics meet natural textures. The Global Terroir Cocktail Programme, curated by François Cavelier, celebrates regional spirits and their environmental roots. Its debut chapter draws inspiration from Kagoshima, Japan, known for sweet potatoes and artisanal shochu, with inventive creations like The 3 a.m. Whisky and Durian’s Consent redefining cocktail craftsmanship.

Complementing the bar is a fermentation-forward, plant-based haute cuisine menu by Chef Lisandro Illa, formerly of Noma. Dishes like Fleshy Fruits Cold Cuts and Golden Sparassis Mushroom Fries transform humble ingredients into culinary art, blending innovation with sustainability.

Adding rhythm to refinement, Peridot will host live jazz and soulful music performances from Thursday to Saturday, featuring artists such as pianist Veronika Semylit.

With panoramic city views, rare spirits collection, and a concept uniting design, cuisine, and conscious indulgence — Peridot is poised to redefine Asia’s elevated nightlife and dining landscape.
